This is important to make sure that any waste gases that the boiler or fire make are properly escaping from the flue. Also to make sure the combustion is complete and the unit is operating at the proper pressure. A gas safety check should only be carried out by someone who is CORGI gas registered. CORGI stands for council of registered gas installers, and only applies in the UK
